Ingredients:
• 16 ounces (454g) fresh (Pad Thai) large Rice Noodles, recommended OR 10 oz (283g) dry variety https://amzn.to/3eXIyMV
• 3 TBS (60 mL) Olive oil
• 1 large onion
• 3 cloves of garlic
• 1 chicken breast
• 2 eggs
• 12 peeled large shrimps, 12 oz (340g)
• 2 stalks of green onion
• 1 ½ – 2 cups (150g – 200g) bean sprouts
• 1/3 cup (38g) of roasted peanuts https://amzn.to/40CYJSP
• 1 lime

+ For the sauce:
• ¼ cup (60 mL) fish sauce https://amzn.to/3LkcsH6
• ¼ cup (60 mL) tamarind concentrate https://amzn.to/3QOMMDI
• ¼ cup (55g) brown sugar
• 2 TBS (30 mL) oyster sauce https://amzn.to/3QIruYo
• 1-3 TBS (15 mL – 45 mL) Siracha hot sauce, optional

Instructions:
1. Soak fresh type noodles in hot tap water. If using dry type, cook/soak according to package’s instruction. Cook will take a few minutes while soaking in hot water will take 10-12 minutes
2. Place a large pan or a wok over medium heat; add oil; at any point, reduce heat if necessary
3. Chop onion into stripes; add into the pan; stir occasionally
4. Mince garlic; dice 1/3 of green onion for garnishing later; cut the rest into 1-inch sticks
5. Slice chicken into thin pieces; add chicken and garlic in the pan; stir occasionally until chicken just almost all turn white; reduce heat if necessary
6. In the meantime, mix all sauce ingredients together
7. Push chicken and onion to a side; crack in eggs; stir and break the eggs until just firm up
8. Add shrimps; stir everything together until shrimps turn pink
9. Drain noodles (if using fresh type) then add into the pan; lightly spread them out
10. Add the sauce in; mix thoroughly; stir occasionally and cook until noodles are tender enough to eat
11. Turn off heat; add bean sprouts, and green onion sticks; mix up and remove from heat
12. Add chopped roasted peanuts; mix up; Serve warm; sprinkle with some diced green onion, wedges of lime and ground pepper if desired. If like fresh crunchy bean sprouts, add them in
