Rava Roast is a delicious South Indian dish made with semolina (rava or sooji). It’s a quick and easy recipe, perfect for breakfast or brunch. Here’s a simple recipe for making Rava Roast:
Ingredients:
- 1 cup fine semolina (rava or sooji)
- 1/2 cup yogurt (curd)
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped tomatoes
- 1/4 cup finely chopped bell peppers (optional)
- 1/4 cup grated carrots (optional)
- 2-3 green chilies, finely chopped
- 1-inch piece of ginger, grated
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- A handful of chopped coriander leaves
- Salt to taste
- Water as needed
- Oil or ghee for cooking
Instructions:
- In a mixing bowl, combine the semolina and yogurt. Mix well and let it rest for 15-20 minutes. This helps to soften the semolina.
- In a pan, heat a little oil or ghee. Add mustard seeds and cumin seeds. Once they splutter, add asafoetida, chopped green chilies, and grated ginger. Sauté for a minute.
- Add chopped onions and cook until they become translucent.
- Now, add chopped tomatoes and cook until they become soft.
- If you’re using bell peppers and carrots, add them at this stage and sauté for a couple of minutes.
- Add salt and chopped coriander leaves. Mix well.
- Pour the semolina-yogurt mixture into the pan. Stir continuously to avoid lumps.
- Add water as needed to adjust the consistency. The mixture should be pourable but not too thin.
- Cover the pan with a lid and let it cook on low heat for 5-7 minutes.
- Check the consistency and adjust salt if needed. The rava roast is ready when it easily leaves the sides of the pan.
- Serve hot with coconut chutney or any chutney of your choice.
