Rava Roast is a delicious South Indian dish made with semolina (rava or sooji). It’s a quick and easy recipe, perfect for breakfast or brunch. Here’s a simple recipe for making Rava Roast:

Ingredients:

  • 1 cup fine semolina (rava or sooji)
  • 1/2 cup yogurt (curd)
  • 1/2 cup finely chopped onions
  • 1/4 cup finely chopped tomatoes
  • 1/4 cup finely chopped bell peppers (optional)
  • 1/4 cup grated carrots (optional)
  • 2-3 green chilies, finely chopped
  • 1-inch piece of ginger, grated
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • A handful of chopped coriander leaves
  • Salt to taste
  • Water as needed
  • Oil or ghee for cooking

Instructions:

  1. In a mixing bowl, combine the semolina and yogurt. Mix well and let it rest for 15-20 minutes. This helps to soften the semolina.
  2. In a pan, heat a little oil or ghee. Add mustard seeds and cumin seeds. Once they splutter, add asafoetida, chopped green chilies, and grated ginger. Sauté for a minute.
  3. Add chopped onions and cook until they become translucent.
  4. Now, add chopped tomatoes and cook until they become soft.
  5. If you’re using bell peppers and carrots, add them at this stage and sauté for a couple of minutes.
  6. Add salt and chopped coriander leaves. Mix well.
  7. Pour the semolina-yogurt mixture into the pan. Stir continuously to avoid lumps.
  8. Add water as needed to adjust the consistency. The mixture should be pourable but not too thin.
  9. Cover the pan with a lid and let it cook on low heat for 5-7 minutes.
  10. Check the consistency and adjust salt if needed. The rava roast is ready when it easily leaves the sides of the pan.
  11. Serve hot with coconut chutney or any chutney of your choice.
